Introducing Junmai Daiginjo Sake

Introducing TSUCHI-YA's original Junmai Daiginjo. The Japanese sake "Bisho" is a premium Junmai Daiginjo sake brewed with careful handcrafting. TSUCHI-YA, which deals with cut glass and blown glass, has come up with the desire to "bring the charm of Japan to the world" by using the high techniques of a long-established sake brewery.

About the taste

The taste when you put it in your mouth is characterized by an elegant aroma, a soft sweetness and umami, and a light nostalgic accent when you swallow it. When paired with food, the lingering umami flavor of the sake expands, enhancing the flavor of the food. The sake is made using 100% "Kyokai No. 1 Yeast," a very rare yeast from the Meiji period that has been revived in modern times, and Niigata Prefecture's sake rice "Echigo Kagura." The water used is natural water from the melting snow of the Nishiyama mountain range, and other carefully selected ingredients.

Long-established sake brewery "Kawachu Sake Brewery"

The Junmai Daiginjo sake "Bisho" is made by Kawachu Sake Brewery in Niigata Prefecture, which has been in business for nine generations since its founding in 1765. The current head brewer, Nomizu Toji, is a master who brings out the umami and sweetness of rice while maintaining a clean, sharp taste. The sake is brewed while incorporating the sensibilities of young people into the "inheritance and development of tradition."

The Junmai Daiginjo sake is packed in a TSUCHI-YA water bottle. The glass bottle, which will not ruin the atmosphere of the dining scene, is custom-made in a deep blue-green color. The hexagonal label is applied by a glass artist using sandblasting techniques. This bottle is designed so that after drinking the sake, you can peel off the sticker on the back and wash it to use it as a water bottle at the dinner table.
