Sake "Bisho" is a premium Junmai Daiginjo brewed with meticulous craftsmanship.
It embodies TSUCHI-YA's desire to "deliver the charm of Japan to the world," a company that handles cut glass and blown glass,
realized through the high technical skill of a long-established sake brewery.
When savored, its flavor is characterized by an elegant aroma, a gentle sweetness and umami,
and a nostalgic, light accent upon swallowing.
When paired with food, the lingering umami of the sake expands,
enhancing the taste of the dish.
It uses a very rare "Kyoukai Yeast No. 1," revived from Meiji-era yeast,
and 100% "Koshikagura" sake rice from Niigata Prefecture.
For water, it uses natural water flowing from the melted snow of the Nishiyama mountain range,
employing carefully selected ingredients.
Mr. Nomizu, the current Toji (master brewer) of "Kawatada Shuzo," which has been in business for 9 generations since its founding in 1765,
is a master craftsman who brings out the umami and sweetness of rice within a clean and crisp profile.
He brews sake while incorporating young sensibilities into "the inheritance and development of tradition."
The Junmai Daiginjo is bottled in
TSUCHI-YA's water bottle.
The glass bottle, which does not spoil the atmosphere of the dining table, is
a specially ordered deep blue-green color.
The hexagonal label is applied one by one by glass artists using the sandblasting technique.
This bottle is designed so that after drinking the sake, you can peel off the back label,
wash it, and use it as a water bottle on your dining table.
